Hands-on training vs. Fellowship degrees—What matters more?

Hey docs, I'm debating between doing a university-affiliated fellowship or joining a private training center like ClinMasters for their dental courses in Noida. The fellowship gives a nice certificate, but I’ve heard the actual hands-on training can be limited. On the other hand, ClinMasters focuses entirely on real patient exposure and direct expert mentorship. As a practicing dentist, I care more about clinical competence than just a piece of paper on the wall. For those who chose practical dental certificate courses over formal degrees, do you feel it helped your career growth more?
